Traditional Christmas Cake Recipe?

I have found many recipes for traditional christmas cakes on the internet, but most of them involve soaking the fruit in brandy and then ‘feeding’ the cake for a long time with more brandy. I am making the cake for a complete non-drinker, and obviously this close to christmas, I don’t have time for the cake to rest. Will not soaking and feeding the cake have an adverse affect on the quality, or does anyone have a recipe for an alcohol-free christmas cake?

Yes, you can make fruit cakes and other cakes without the brandy/alcohol. Just substitute orange juice. I am planning on making Lane cake, which is sponge cake layered with a filling of dried and candied fruits and the recipes I’ve seen say you can substitute orange juice for the brandy. I’ve seen many fruit cake recipes that either don’t call for alcohol in the first place or say you can use orange juice instead of the alcohol. I like the taste of alcohol in the cakes, but you can definitely do it without :-)
